  • What's for Dinner March 2012?

    Adding the march to the title to distinguish from all of the others!

    I'm making a shopping list tonight...anyone have any good recipes?
    Married to a newly minted Pediatric Rad, momma to a sweet girl and a bunch of (mostly) cute boy monsters.

    We're doing a Pioneer Woman kind of week. Frito Chili Pie tomorrow night (OMG, sooo good), Bow tie lasagna for Friday night (I'm leaving the meat out since it's Friday), and then Pot-roast on Sunday (all recipes on her site). I'm doing every other night because I will make enough for left overs the next day.

      I need this sooo much. I've been meal planning and I'm getting tired of our rotation. I need to work in some new favorites. (This week we are on vacation so no cooking for me!)

        MIL got us a subscription to Cooking Light for Christmas. (I'm not sure why...) It's good for flipping through, and I made this on Sunday: http://www.myrecipes.com/recipe/cris...0400000119668/ Tasty, but probably too much effort for the payoff (I am the world's slowest cook).

        Black bean soup in the crock pot yesterday. From a Williams Sonoma cookbook... I could dig it out if anybody's interested.

        And that's probably all the cooking I'll do for another week, haha. Salad, leftovers, or a frozen dinner tonight.

            I've been trying a few new things this week that have all turned out pretty good. All fish or vegetarian.

              I'm either doing simple "shake-n-bake" chicken thighs this way: http://chaosinthekitchen.com/2010/03/chicken-legs/ or else my standby vinegar chicken saute. A Facebook friend admitted to being completely obsessed with broccoli made like this: http://www.amateurgourmet.com/2008/1...st_brocco.html and it does sound good so I'm going to try it tonight. Not sure yet about a side, if I'm really ambitious I might make a feta/orzo/cucumber/red wine vinaigrette pasta salad, but chances are pretty high I'll just make plain white rice or something. After all, DH will be napping right up until (if not through) dinnertime as he's heading into a night shift, so complicated dinner prep that leaves the kids unattended and shrieky is right out...on the other hand, chopping cukes and boiling orzo isn't THAT consuming.

                    We made it with a splash of tequila and some added chicken broth to build out the "sauce". Devoured by the whole family two Sunday dinners in a row.

                            Ok, so I am super slow at chopping, so I did that part the night before, then added the soaked beans and liquids and turned on the crock pot in the morning. Made the salsa right before serving.

                            Black Bean Soup
                            The New Slow Cooker (Williams-Sonoma)

                            1 lb (2 1/4 cups) dried black beans, picked over and rinsed

                            In a large bowl, combine the beans with water to cover by 2 inches and let soak overnight. Drain well.

                            1 lb tomatillos, husks removed and halved

                            Preheat the broiler. Arrange the tomatillos on a rimmed baking sheet. Broil, turning as needed, until blackened on all sides, 5-7 minutes total. (Took me more like 10-12.)

                            Put in slow cooker:
                            Broiled tomatillos
                            1 large yellow onion, finely chopped
                            2 stalks celery, finely chopped
                            1 carrot, peeled and finely chopped
                            1/2 teaspoon red pepper flakes

                            Black beans
                            5 cups chicken stock
                            1/4 cup medium-dry sherry
                            1 teaspoon sherry vinegar (I used red wine vinegar)
                            1 smoked ham hock (about 1/2 lb)

                            Cover and cook on low setting for 8-9 hours.

                            Remove the ham hock, pull off the meat, and discard the rest. Shred the meat and set aside.

                            Blend the soup until smooth. I did this with an immersion blender, but you could also do batches in a blender or food processor. Add the reserved ham meat, and season with salt and pepper.

                            Top with crumbled queso fresco and corn avocado salsa:
                            1 1/2 cups corn kernels (fresh or thawed frozen)
                            6 green onions, finely chopped (it says including the light green tops... do people not usually use those? I do.)
                            1 avocado, pitted, peeled, and diced
                            2 tablespoons chopped fresh cilantro (I don't like cilantro, so I left it out)
                            juice of 1 lime

                            Saute the corn kernels in olive oil or a little butter until they start to brown. Then toss everything together in a bowl. Serve on soup.
