    I need to make the corned beef in the fridge... Something I haven't eaten since DS was a newborn. Mistaaaaaaaaaaaaaaaaaake!
    (Just like ST's DD, he was SUPER sensitive to the cabbage).

      I made carne asada last night. It is soooooo good. And it makes a ton so we will have some food for the rest of the week too. One of my favorite "Homesick Texan" recipes.

        I was naughty, didn't make the corned beef, and instead made Spicy Thai Garlic Shrimp with veggies and brown rice. Score!

              I took this idea from Hungry Girl. I was busy running errands and didn't get home until after 6 so I needed to throw together a quick meal. I was feeding 3 adults & 4 kids. I used 3 boxes of Butter Garlic flavored Pasta-Roni (it was angel hair pasta) and some cauliflower & broccoli. I used fresh that I had but the steamer bags in the frozen section would work too!

              I cut up 1/2 a head of cauliflower & quite a bit of broccol; I put them in the steamer basket, covered it up & then began to cook the pasta roni. I used a larger than necessary nonstick pot to cook the boxed pasta. I used EVOO instead of butter plus I added a bit more liquid so it would be creamier/ruunier. I added fresh ground pepper& about a teaspoon of curry powder to the liquid then I added the pasta. By the time it was just about aldente I took the now tender veggies & stirred them into my the pasta. Everyone loved it! My "I won't eat cauliflower" kid didn't even notice because it was the same color as the pasta & sauce! I felt guilty since it was a semi homemade meal... but hey even DH loved it! I love it when I "cheat" and everyone ends up liking it!

                I made that roasted broccoli yesterday - good stuff! Paired with some mashed potatoes (the last of them!) and a preseasoned tenderloin from the grocery store.

                  I'm going to do the broccoli tonight but steam it then add the other ingredients & just put it under the broiler. I do the same thing for my Brussel sprout recipe!

                    I love undon noodles! Stir fried udon noodles with tofu, bok choy, mushrooms & carrots. Yum.

                        Tonight I went off-recipe... :O Modified a picadillo recipe to include dd's favorite ingredients (squash, zucchini, onions & peas) and swapped out ground beef for turkey. So far, it's a hit although I'm really not used to ground turkey.
                        Wife to PGY4 & Mother of 3.

                          I know you went, off-recipe, but could you write up what you did? That sounds really good and something I would like to make.

                          Tonight I roasted potatoes and baked chicken with onion and tomatoes. Very simple but I have been eating too much junk, so I wanted something a little less fancy.

                            Sure, it isn't really anything special. Chopped up one zucchini, one yellow squash, one sweet onion, one orange bell pepper and sautéed in a bit of olive oil, tossed in about 3 cloves of garlic (minced if you don't have a garlic press) once the onions were translucent. Separately, I cooked a lb or so of ground turkey (some people would just do this in with the veges) and then tossed that in the mix. Added about 1/4 tsp black pepper, 1/2 tsp salt and a few pinches of cumin to taste. Tossed in a can of diced tomatoes and brought it to a boil, then let it simmer for 10 minutes or so. Finally tossed in about a cup of frozen peas (helps cool it off for the toddler), covered for a few minutes and served.
