  • Thai Marinated Grilled Chicken Skewers

    O M G these are really good. I literally swallowed my last bite and told my husband "I have to put this recipe on IMSN immediately." It is that good. And it's mostly things that you might have around the house. fantastic. I would totally even make this for company.

    3 lbs boneless chicken breast-cut into 1 inch cubes

    Marinade

    1/4 cup soy sauce
    3 tablespoons brown sugar
    2 tablespoons fresh lime juice
    2 tablespoons olive oil
    1 tablespoon curry powder
    2 garlic cloves, minced
    1 teaspoon finely minced ginger
    1/2 teaspoon ground cardamom

    Whisk all marinade ingredients together. Pour over chicken cubes. Massage meat with your hands for 1 minute or so. Cover bowl with plastic wrap and marinate for at least 1 hour or as long as over night. (we left ours in there for probably about 5 hours.)

    Thread 6-8 chicken cubes onto each skewer. Cook on the grill for 8-10 minutes turning half way through.

    She also recommends serving with this peanut coconut sauce, which was delicious, but I think it was also really delicious without.

    Peanut Coconut Sauce

    One 13.5 oz can coconut milk
    1/4 cup creamy peanut butter
    1/4 cup brown sugar
    1 tablespoon soy sauce
    1 1/2 tsp red curry paste.

    Combine ingredients and cook over medium heat for 3 minutes. stirring occasionally.

          Mmmmm, sounds yummy. I'm getting my grill back in a couple of weeks, this sounds like a good recipe to break it in.
