  • A Good, Solid, Chocolate Cake

    My SIL's 8th birthday was this week, so I am making her a cake when my in laws come to visit this week. My MIL says she likes chocolate cake. I've got loads of recipes for all sorts of cool variations on chocolate cake, but nothing simple. She's a very limited eater with texture issues (she's actually going to "food therapy" for that--the stuff they do is neat!), so I want to make it pretty simple. I've seen her turn down desserts if something is too involved.

    So anyone got a great, plain ol chocolate cake recipe? She actually really likes coffee flavor?? so if that is in the recipe, that might be a bonus.

    We usually go with Hershey's "Perfectly Chocolate" Chocolate Cake. I wonder if you could make the icing from Pioneer Woman's brownies from her first cookbook and use that on it - I believe it had coffee in it.

        The Cakemix Doctor has a good Mocha Chocolate cake recipe.

          If she has texture issues, maybe a flourless chocolate lava cake would work?

            I use the Barefoot Contessa Beatty's Chocolate Cake recipe. It's on the food network website. It has coffee in it & is my favorite chocolate cake. You won't be disappointed. Very simple, moist & wonderful. I also use Hershey's Perfectly Chocolate Frosting with it.
