    I have a TON of it. I have a curried red squash and lentil soup recipe but what else can I do with it? Will it freeze?

    I do a soup that is squash, a couple stalks of celery, a couple of white potatoes, a couple of carrots, simmer in chicken broth until tender, then puree until smooth.

    And, yes, cooked squash freezes beautifully.

        And now I want squash. I'm hungry. I chose wine over ice cream. Maybe I could have some sherbert or Greek yogurt. It's Friday. Must have some dessert.

          I like to peal, cube and roast butternut squash. Then I put it in pasta with a brown butter sauce made with a diced shallot and fresh sage, topped with toasted pine nuts and parmesan. Yummy! It's also good as a side just roasted, tossed with rice or spinich or other veggies.

                My favorites are curried butternut squash soup or butternut squash risotto.
