    I sent DH to the grocery store to pick up some things to make a stir fry yesterday. One of the items was a "small piece of ginger". I forgot to explain to him that that he can break off a piece from a larger one, so he brought home a giant root. I used maybe an 8th of the root he brought home. If you had a ton if ginger, what would you do with it?

    You can put it in the freezer. I keep a chunk in there & its very easy to peel & grate when you need it and it lasts forever.

        Peel it before you freeze, then just grate what you need and pop it back in the freezer.

          You can just wash it really well before freezing. We grate it often w/out peeling it, but I'm guessing that's because it must be a young root w/ very thin skin.

            Do you guys store your ginger in the fridge or out on the counter?

              I loved reading about this. I get ginger and some times don't go through all of it, then it shrivels up. Good to know I can peel it and throw it in the freezer.

                Excellent idea for my upcoming clear liquids only phase!
                In college a friend from Singapore would steep ginger, some lemon peel and then sweeten w/honey for my sore throat!
