Made the ratatouille and it didn't come out like I had remembered. So I tossed it an remade it.
I added yellow squash and more tomatoes. And I cubed everything in the same dice (onions too). Cooked it a lot less time. Started with onion and eggplant, then squash, zucchini and mushrooms (garlic and herbs) and cooked it until it was all soft like I liked it. Then I added the tomatoes and some fresh parsley. Much better!! I wish I had gotten some orange bell peppers. I think they would've been a nice addition.Mom of 3, Veterinarian

Yum!
I went to the grocery store today to take a look around and it was crammed packed with people. I thought it was busy on Saturday because of the big college football game but this was twice as many people. The parking lot was full, all the aisles of the store were full, the lines to the check out were long. I tell ya it was nuts! The cranberry sauce was out, they had more pies than ever, and I saw mashed potatoes, turkey gravy, some kind of carrots, sweet potato something, wild rice and herb stuffing, and portions of turkey or fully cooked chickens you could buy.
I'm torn between buying some of these items and having a Thanksgiving for two or not spending the money and just treat it like any other day. Hubby says don't spend the money on it but I must admit today I'm feeling kind of weird not doing anything for the holiday. I have to work tomorrow and Friday but on my break I could go to the store and pick stuff up for when I get home. I dunno.
One year my Mom and I tried not doing anything for Thanksgiving and then at 9 pm at night we were trying to find any place that was open to catch a last minute Thanksgiving meal if possible. Everything was closed and we found one of these truck stop restaurants like Denny's that was open. The food looked so gross I couldn't even eat it after ordering it and sent it back to the kitchen. lol I did eat a side of mash potatoes though. I didn't think they could screw that up too bad. Even their pie was nasty. Never again. *shudders*PGY4 Nephrology Fellow

We decided to do a Thanksgiving potluck since neither of our families are doing anything (and DH has to work overnight). And since I'm apparently a control freak that cannot leave it to others, I ended up making two pumpkin pies, a chocolate toffee pie, and from scratch cranberry sauce tonight. Tomorrow I'm making turkey (with a slower cooking method that I found online so I'm crossing my fingers it gets done before DH leaves for work), cornbread, mashed potatoes, and brussel sprouts. This is our first time hosting Thanksgiving and I'm actually getting pretty excited for it...

After coming home early from work this morning I slept until this afternoon and then went to the store with one hour before it closed for the holiday. I picked up the mashed potatoes, turkey gravy, sweet potatoes and whatever turkey they had left. It was some peach stuffed gourmet cooked turkey. I also grabbed some french dinner rolls a spinach dip and a shrimp linguine side since there wasn't any green beans or much else left. I also picked up a strawberry rhubarb pie, which I was really excited about, and vanilla bean ice cream for dessert. Not a bad Thanksgiving for two but it does feel awkward not to have a bunch of people around to celebrate with.PGY4 Nephrology Fellow

We had DH's parents over, and a couple friends came over, too, we ordered most of the food from Whole Foods, and it was very yummy and very easy.Sandy
