There's a seafood paella in Joy of Cooking, but I haven't tried it. The saffron rice, and a lamb biryani with saffron (looks OMG amazing) are in Madhur Jaffrey's Indian Cooking. I don't think I can reproduce them for copyright reasons, but if you google "madhur jaffrey saffron rice" there are some recipes from what look to be legit sources.Alison

Actually my hubby is Persian, so I have learned to cook Persian food very well. And saffron is used in almost every dish...especially basmati rice. But since it is so expensive...the easiest way to use it is to pour the pack of saffron in a coffee grinder and add 3 sugar cubes and grind into a powder. Then store in a spice bottle. Then when you want to mix it into your rice, you add just a pinch to a couple tbsp of boiling water, then add olive oil to it and let it sit for awhile so the color comes out. Then mix it with only 1/3 to 1/4 of the rice you make. And it looks and tastes beautiful.
Also you can use it to marinate chicken too...add sliced onions, saffron water, olive oil, lemon juice, lime juice and marinate overnight. Then grill the next day...it will have a beautiful yellow color and is very yummy
