    I forgot to post this earlier. It is really easy to make and is also a great gift to give. You can use different nuts, like cashews. I usually make it for my father in law....but not this year because I thought that coal brittle wouldnt' turn out too well.

    Just beware. This gets REALLY hot! Keep kiddos away!

    Microwave Peanut Brittle

    Mix in a 9"x9" glass dish:
    2 c. sugar
    1 c. light corn syrup
    2 c. raw peanuts

    Cook on high in the microwave for 8 minutes. Stir. Cook on high for 8 more minutes.

    Add:
    5 T. butter
    2 tsp vanilla

    Stir well. Cook 4 minutes.

    Add:
    2 tsp. baking soda

    Stir.

    Pour brittle onto foil (must be foil!) and pull to desired thickness. Let cool and break into pieces.

    This is super tasty and easy.
