  • What to do with mint

    I had to cut down our mint. Now I have a ton of it sitting in my fridge. Any ideas as to what I can make that is edible - that will use that much? So far, my only plans are to dry it and make soap.
    Finally - we are finished with training! Hello real world!!

    Blend/muddle it up and freeze in an ice cube tray. Then store in baggies in the freezer for mojitos (or mint ice teas, or whatever)

      It's great in salads - tabouli, melon/mint, cucumber/tomato/mint, etc. Also mint tea or cocktails, or just flavored water - put a pitcher in the fridge with cucumber slices, lemon/lime slices, and mint leaves. Or you can dry it in a low oven and save for later, or you can freeze it like Scrub-Jay said.

        Mojitos. Lots and lots of mojitos.

        Seriously, though - I sometimes just hang mine in bunches around the porch to scent the air. You can't keep up with that stuff. We've got a mint hedge.

          I make mojitos with spearmint...which has gone crazy too this year. I actually made a huge batch of mojitos last night.

            Make Moroccan tea? Add leaves to boiling hot water and add a pound of sugar.
            In my dreams I run with the Kenyans.

                A great dip is to take plain yogurt cheeses(lebneh in Arabic) it's thicker than Greek gogurt, add powderized or finely crushed dry mint, a little water(thins it a bit to make it creamier for mixing)& some salt. Mix well spread out on a small plate then drizzle w/olive oil. Dip cucumber slices or tear off small bits of pita bread, to grasp a black olive, and dip into it as well...yummo! I also will spead the minty yogurt cheese on thin pita and then add cucumber sticks, roll it up and have Arabic style cucumber sandwich...my kids love these. We use dried mint in hot tea as well.

                  I actually just left a pot with sugar and mint steeping when I went home for lunch. I put in two big handfuls. I figure that if it is too minty, I can water it down later. I am looking forward to tea when I get home...especially since it is 95 degrees already!
