Is there any way to prep cinnamon rolls so they are ready to pop in the oven in the morning?

Of course! Get them to the rolled stage but before the last rise, put them in the fridge. In the morning, bring them out and give them a little extra rise time, and you're good to go! I've been doing cinnamon rolls for Christmas morning for the last few years, and heck if I'm going to actually knead dough the morning of.
