  • What's for dinner this week?

    I too, love reading what everyone is doing and since I'm home- (my survey was cancelled due to weather- yay!) I've been cooking every night.

    Last night I made Hot and Sour soup from the cooking light cookbook- and it was awesome! I nuked some frozen Beef with Broccolli I bought at Safeway and we ate in.

    Tonight I'm making a casserolely thing that I haven't made in years- Chicken Breasts with one slice of swiss cheese (I bought the reduced fat kind) topped with low-fat mushroom soup thats made with yes- white wine rather than milk, and then unflavored bread cubes on top. I'm craving comfort foods since it's so damned cold here!

    (High today=27)

    What's on the menu elsewhere?

    I made a chicken casserole this week, too, Jenn.....known as "chicken broccoli casserole" around our house....it is four cups of cooked chicken, 2 pkgs. frozen broccoli, and a sauce made from Miracle Whip, cream of chicken soup, lemon juice, and curry powder....topped with a half pkg. of herb stuffing (the cubes) and drizzled with some melted margarine. Yummy.

    I have been going to a recipe site that has users rate the recipes after they try them.....I found an awesome meatloaf recipe there that I made last week. http://maindish.allrecipes.com/az/LittlMtLvs.asp We still have a little of that left. Oprah had a great recipe this month http://www.oprah.com/foodhome/food/r..._chicken.jhtml This is awesome! The only change I made was to cut the chicken into strips before coating it....I thought it would be easier for the kids. I had some of this cold....it was still good. DH had some on linguine with spaghetti sauce....he enjoyed it very much that way. I think we are having leftovers tonight and a "breakfast dinner" tomorrow.....maybe order pizza Friday.

    Right now, the boys want me to make some peanut butter cookies with chocolate chips in them, so I am going to go to recipes.com and look for a high-rated recipe.....

      Last night we had cream of spinach soup (with bacon & cheese sprinkles) and spinach salad. But the spinach salad had a motherlode of stuff in it - basically anything I had on hand: some peas, chopped ham, tomatoes, hard-boiled egg slices, and grated cheddar cheese.

      Tonight we're having grilled (on stovetop grill pan)greek chicken in pita bread with additions (romaine lettuce, tomatoes, olives, feta cheese, and cucumber). Speaking of which, I've got to go thaw the chicken breasts!

        Monday we had chicken in a mushroom-wine sauce over linguine. Last night we had clams in a white wine sauce over linguine. Tonight we had chicken breast nuggets with spinach. Tomorrow we are having seafood chowder (NE style). Friday we will possibly go out for sushi.

          Let's see... Tuesday we had a chicken casserole similar to Sally's, except I mixed cooked chicken cubes, cooked broccoli, cooked pasta, a can of broccoli cheese soup, sour cream, topped with bread crumbs and shredded cheese and baked. Yesterday I made chicken breasts with a crushed Ritz cracker breading, served with a side of noodles and green beans. Tonight we're having leftover chicken casserole (from Tuesday) served with a side of biscuits and honey (those frozen Pillsbury dinner rolls and biscuits are great, BTW!). Tomorrow is Friday - which means the end of the week ... which means I'll be tired of cooking by then - so we're having a frozen DiGiorno pizza. Saturday we'll eat out.

          I love allrecipes.com, I used it all the time! I've gotten so many recipes from there.

            We're having a non-cooking week.

            Monday G did make sauteed chicken, peppers, and onions with chipotle sauce (from a jar), which we had over rice.

            Tuesday it was frozen crab/dill ravioli from Trader Joe's (mmm, Trader Joe's!) and edamame.

            Wednesday I had a doctor's appointment just a few blocks from our favorite sandwich shop, so I brought home wraps (mmm, wraps!).

            Yesterday we made burritos (the suburban American version of my childhood--low on authenticity, high on taste).

            Tonight we're going to our favorite Indian restaurant with friends (finally!--we've tried to get together with them like three times since November and it always gets cancelled).

            So except for Monday it's been reheat or takeout all week.

              A takeout or eat-out week at our house, too, but all of your meals sound wonderful. I wasn't aware I was in the presence of so many gourmets! I do have ground beef defrosted in the fridge and I fully intend to cook with it tonight, though it will probably only be Hamburger Helper. Thu Van, if you lived nearby, I would invite you guys over so your family could experience this wonderful delicacy!

                You crack me up, Sue! I agree.....on any given night, Thu Van is having something WAY BETTER than we are for dinner.

                  Yum...these are all making me hungry!!! Time for lunch

                  I cook a lot of german meals, so last night was pork filet's stuffed with spinach and carrots in a white wine sauce. Tonight will be a special home-made potato-noodle (made with potatoes and flour) with saurkraut cooked with bacon, onions and lots of butter.

                    What we're having for dinner this week is nothing, because I'm never eating again.

                    This morning a nice crazy lady on the crowded subway kindly offered me her seat. "Who, me? Oh, no thank you." Then I'm thinking Hmm, what was that? Do I look pale or ill today?

                    Then it slowly dawns on me: Oh God no, she thinks I'm pregnant! 8O The horror . . . the horror. It's not like it's news to me that I'm sporting a layer of winter fat (okay, fall and winter), but you like to think maybe no one else has noticed, you know?

                    I'm going to chalk part of this up to her slight craziness and part of it up to an unfortunate sweater/coat combo (especially since I used to weigh 40 lbs more than I weigh now and no one ever said they thought I was pregnant), but maybe it's time to start working out, huh? Oy, vey!
