    Anyone know a good, easy recipe for a casserole type thing for brunch?

    I think I've made this frittata before. Regardless the concept is solid. Saute veggies first, and add egg mixture for a few minutes then broil our bake depending in how long you cooked on skillet

      I got ths from coworker in 2010. I never made it myself but when he made it, it was delicious.

      Conceita's Breakfast Casserole (from Lou, via Arlene Christiansen at Forest Knolls)

      1 lb. jack or muenster cheese ( I used low-fat monterrey jack)
      1 pint small curd cottage cheese (I used low-fat)
      2 c. ham, diced (optional)
      1/2 cup melted butter (so much for low-fat)
      1/2 cup sifted flour
      1 tsp. baking powder
      1 dozen eggs, beaten
      salt/pepper
      5 -6 drops Tabasco

      Mix all ingredients. Pour into greased 9 x 13 casserole. Bake @ 400 degrees for 15 minutes. Reduce heat to 350 and bake 15 minutes longer or until knife inserted in middle comes out clean.

      (Seems to take longer than 15 minutes usually.

            I do it with all kinds of toppings in addition to or instead of sausage too - bacon, spinach, onions, peppers, mushrooms, without cheese, whatever. I've also made it with egg substitute. It's always a hit!

                I have an easy eggs Benedict casserole recipe that is tasty but I'd have to find the recipe

                          I've made it with blueberries instead of chocolate, and it was just as delicious. I imagine you could pretty much substitute any kind of fruit or topping.
