Anyone have a super moist yummy vanilla cake recipe they can share? I have an awesome chocolate cake recipe which I was going to use for O's bday cake but today he said he wanted and half vanilla and half chocolate cake. I figured I could half the chocolate cake recipe and make one layer chocolate and one layer vanilla. Help!

I used this the last time I made a white cake. It was pretty good. I felt like it was kind of a pain but that's probably just because I never remember to get stuff out ahead of time that is supposed to be room temp.

I have one. This is a hit! Super moist
Not-So-Plain Vanilla Cake
1 box vanilla cake mix (or white if you can't find vanilla)
1 box vanilla instant pudding
1 cup (8 oz) vanilla yogurt
1/2 cup vegetable oil
1/2 cup water or milk
4 eggs
1 tsp vanilla extract (optional, but I'd definitely add it if you're using a plain white cake mix)
Mix it all up and bake it in whatever size pans you please. Frost with any favorite vanilla frosting.
Definitely very vanilla-y.Heidi, PA-S1 - wife to an orthopaedic surgeon, mom to Ryan, 17, and Alexia, 11.

Thanks for the suggestions! I want it all from scratch so I may try CS's recipie. Also thinking of using a hybrid buttercream/whipped cream frosting. The cake request has now changed to an all vanilla cake with vanilla frosting in the middle and choc and vanilla frosting on top in a yin yang. Oy. This is getting complicated.Wife to Hand Surgeon just out of training, mom to two lovely kittys and little boy, O, born in Sept 08.

Haha, sounds like he has very discerning tastes . Let us know what you end up going with and how it turns out. DH loves vanilla/white cake, I could always use another recipe for it in the arsenal.
ETA: I don't really have a good one from scratch in the arsenal now otherwise I'd share it. Didn't mean to make it sound like I was holding out on you haha

I've used this one with good results for coconut cake. I do drizzle it with coconut milk, so that might make it more moist. I haven't tried it straight up as a vanilla cake.
It is a good recipe, though.

Let us know how O's cake turns out. All the options have sounded great to me!

I ended up using this recipe-
http://www.cupcakeproject.com/2011/0...-baked-by.html
I doubled it. It made a high cake. I think 1 1/2 might of been a better amount. The cake is yummy. Moist but not really dense. I used a hybrid frosting recipe of half butter cream and half whipped cream. It is supper tasty but looks not all that smooth.
Here's the recipe. I doubled the recipe and added 1/3 cup cocoa powder to one batch to make chocolate and I added yellow food dye to the vanilla.

I'm going to use the same recipe for O's cupcake for his party on Sunday. I'll probably just use a regular butter cream frosting for those however.Wife to Hand Surgeon just out of training, mom to two lovely kittys and little boy, O, born in Sept 08.
