  • Quick and Easy meals

    I need some quick and easy meals with few ingredients. Not crock pot if possible. I'm sort of bored of shake-n-bake chicken, etc. I've got a couple of recipes myself that I'll toss in!

    I haven't much lately, but I used to make a bunch of different meals with cream of chicken soup:

    • Scampi: soup, garlic, lemon juice with chicken and spaghetti
    • Cajun Pasta: soup, cajun seasoning (e.g. Tony Chachere’s) with chicken and penne
    • Mexican Pasta: soup, rotel (diced tomatoes and green chilies), cheese (could melt in velveeta or sprinkle with shredded cheddar), with chicken and penne
    • Yumasetta: mix soup with egg noodles, layer with ground meat and tomato soup, top with shredded cheddar and bake
    • Alfredo sauce: soup, parmesan, pepper with chicken, broccoli, and/or your favorite pasta

      I made this up a few years back to use up some leftover Velveeta:

      Easy Cheesy Taco Pasta

      Ingredients:
      • 1lb ground turkey (or beef)
      • 8oz whole wheat penne pasta (or any other pasta)
      • 3/4 cup water
      • 1 packet taco seasoning
      • 1 15oz can corn, drained
      • 1 15oz can black beans, rinsed and drained
      • 1 10oz can rotel, drained
      • 4oz velveeta


      Directions:
      1. Brown meat.
      2. Meanwhile, cook pasta according to directions.
      3. Once meat is cooked, drain.
      4. Add water and seasoning to meat and stir.
      5. Add corn, beans, and rotel to meat.
      6. Simmer for 5 minutes, stirring occasionally.
      7. Add velveeta, stirring until completely melted.
      8. Add drained, cooked pasta.


      This recipe makes about 6 servings, give or take a couple depending on how hungry you are. It makes delicious leftovers too!

          I'm all about the pilaf lately. I cook brown rice or quinoa in my rice cooker, then saute up some onions and veggies, and toss it all together. Then I can serve that with a really simple meat dish (eg. Baked Chicken Legs, or pan-fried pork chops, or vinegar chicken saute kind of like this) and a side salad. If I'm feeling really crunched I can skip pilaf-ing and just serve the plain grain, or skip adding the side salad and just really boost the veggies in the pilaf. Yesterday's pilaf had broccoli and edamame and slivered almonds and it was so yummy I basically made a meal of it by itself.

                We do stuffed spuds (use plain greek yogurt for sour cream) and sauteed veggies, sausage, cubed ham or whatever we have in the fridge. They comforting, filling and cheap.

                Best chicken salad ever:

                Debone a rotisserie chicken, heat 1/2 cup veggie oil and 1/4 sesame seeds til toasted, cool, add 1/3 soy sauce and 3 TB sugar, stir to dissolve, add chicken and one cooked, drained package of penne pasta. Spoon chicken/pasta mixture of salad greens. Side of buttered baguettes. Everyone asks for this recipe. It's Delish and good for leftover servings, lunches, etc.

                Tacos for bars are an easy go-to for us.

                  Chicken Tortilla Soup

                  Shredded cooked chicken (you can use rotisserie or left over or whatever, even canned, but I wouldn't)
                  1 can rotel tomatoes
                  1 can corn
                  1 can black beans (rinsed and drained)
                  Chicken stock or broth to cover
                  1-2 tsp of cumin

                  Heat and serve with tortilla chips, shredded cheese, and sour cream.

                    American Goulash

                    (This has nothing whatsoever to do with goulash, it's just what my mom called it)

                    1 pound macaroni cooked and drained.
                    1 pound of hamburger browned
                    1 large can crushed tomatoes.

                    Mix. Heat. Serve.

                            I get a bunch of different marinades at TJ Maxx/Marshalls and just rub on meat/fish and stick in oven. Yesterday was pork tenderloin in teriyaki pomegranate sauce. The marinades also work well on quartered potatoes.
