  • Vegetarian Dinner Party Recipes?

    I invited a friend to dinner with her husband and toddler. She's a vegetarian and a former nutritionist. Her husband and daughter are not. My kids hate veggies and pasta (though they'll be happy and polite if I just put a bowl of fruit salad within their reach). Any recommendations? Preferably something foolproof that won't require too much babysitting or keep me chained to the stove?

    I was thinking veggie lasagna or homemade mac & cheese (knowing my kids won't eat it) but I'm not sure if that will past muster with the nutritionist.

      Vegetarian chili with corn bread? Veggie lasagna is good and probably can be bought someplace. Risotto (maybe bought from someplace?). Fajitas (cook a small pan of just veggies maybe some tofu).

              I usually go Mexican or Indian. There are several veggie Indian recipes online. As far as Mexican, I replace the meat for pinto, black and hominy. Just had pozole at a friends house...all veggies but sooo good.

              I have also made homemade pizzas and make my own sauce (easy in the crockpot) use roasted vegetables, nice cheese and fresh herbs. If you do not want to mess with the dough, you can buy dough at TJs or even better get it from Papa murphys....it is already pie shaped.
              Finally - we are finished with training! Hello real world!!

                  Vegetarian Dinner Party Recipes?

                  One of my faves is pan fried asparagus with kiwi, lime or lemon juice, sesame oil, sesame seeds, salt, and pepper. Super easy and cooks fast. I haaaaated asparagus until I had it this way and it's now one of my favorite veggies.

                      I'm thinking either pasta with pumpkin cream sauce, sage, pinenuts or butternut squash ravioli with brown butter & sage sauce, spring salad with goat cheese and dried cranberries, maybe some asparagus, and a fruit salad for the kiddos. My kids won't eat the pasta but they'll eat everything else.

                      I'm thinking that pizza is too many people in the kitchen and too much last minute assembly. Same for tacos. K1 is weird about mixing different consistencies (hence the reason he doesn't like pasta dishes...noodles + sauce or whatever) of food so he would probably flip out if I served a casserole with cheese and beans.
