I served it in tacos and rice bowls, and also in a southwestern quinoa dish with black beans and corn.

I just made this Taco Ranch Chicken Chili in the slow cooker tonight, and it was really good. The recipe says you can do it with an Instant Pot, too.

Ooh, this reminds me of the Taco Junk recipe I used to make. It's been a long time, but I should totally do it again, especially in the Instant Pot, since I could brown the meat in it directly.
