  • Birthday cake recipe?

I'm looking for a relatively easy white cake recipe for C's birthday this week. I'm planning on decorating with my buttercream icing, which everyone loves but DH says the cake I made last time was too old fashioned. It was based on an old Irish recipe so I know what he means, it's a drier kind of cake.
I'm looking on pinterest but I would love to do something tried and true.

I haven't tried this recipe in particular, but I trust Smitten Kitchen with everything: http://smittenkitchen.com/blog/2009/...birthday-cake/

I'm not much of a baker, so I like a simple 1-2-3-4 cake. I use the one from the Art of Simple Food book or from the Joy of Cooking, but there are a bunch online, eg. http://www.epicurious.com/recipes/fo...-cake-51128010

I really like Elana's Pantry for recipes (GF), and Pamela's for pre-made baking mixes.

FWIW, we do simple traditional cakes for our kids.

I've made the Cooks Illustrated yellow cake...it was good but didn't last....it was only good the first day and maybe the second...and it was a bit tedious as many Cooks recipes are. I haven't made the cake by smitten kitchen, but I'll second that many of them are great! I used to follow Bakerella.....but that was years ago. She did have a basic cake recipe back then though.

We've used this one. It's decent, but yellow.

Oops, I think I meant yellow cake anyway. I'm so confused, it's like an alternate universe when it comes to baking. I used to bake often before. You'd think after 10 years I'd know these things but it's like learning a new language with different measurements and names for ingredients etc. Is yellow cake traditional then? I have no idea what cake flour is, I thought there was just all purpose and self raising. Thanks so much for these recipes. I have so much to learn but I can see some pretty simple cakes already.

I think the difference between white and yellow cake is usually whether or not you are using the whole egg vs just the whites

And cake flour is ultra fine flour....to give a light crumb insteam of a heavy crumb like you'd get in breads. You can substitute all purpose flour by using less....but the cake flour is worth it if you can get it. Though I've never seen it unbleached......

I've always enjoyed doing the ones that start with the box recipe and you just add a few ingredients to spice it up! Examples:

I think it turned out well. That is the boy trying to stick his finger in the cake.
