    a potato?

    I'm a carboholic. So I like potatoes anyway, but in cream with salt and pepper is my favorite! mmm..

              I lurve a potato baked within an inch of its life, with crunchy skin and fluffy innards. But, sadly, that's one of the least healthy ways to eat tubers! So I'd say second-best is little waxy red potatoes boiled and smashed (not mashed, still chunky and with peels) with parmesan and a little butter and milk mixed in -- spread in a pan and sprinkled with parmesan and baked till the cheese begins to brown. Yum!

                I will eat a potato in any form. I LOVE them. I've actually been on a potato 'kick' lately. I get the little red ones, slice them up thin, give them a coat of olive oil and a bit of salt, bake until crispy. Mmmmm. Honest to God, I have some in the oven as I type and they are just about ready to eat!!

                    I'm getting excited for lefse. That is some serious potato with plenty of butter and flour (just for some extra carbohydrates).

                    I was thinking about this the other day....I think my favorite way to eat potatoes is baby potatoes simmered in broth and a little olive oil and rosemary and cooked to the point of the broth soaking up/steaming off and the potatoes getting brown. The some salt on top. Yum.....
