  • Christmas baking

    Is there anything that you bake or make every year in the cookie/dessert dept. for Christmas. I'm looking for some new ideas. I usually make Peanut Butter Blossoms and Hersheys Mint Brownies. When I was a kid we pretty much spent a day making and decorating sugar cookies now I don't like them at all.

    DW will spend entirely to long in the kitchen making Krumkake for everyone she knows....and of course we help because they are good and it has been a tradition for her since she was a very little girl.

    Other items might be, peanut brittle, Peanut Butter Blossoms, something no bake and some fudge.

      Matt, is your DW Norwegian or Swedish? DH's mom is Norwegian and she used to make those (krumkake) every year. We will probably make lefse for Christmas. Hold the lutefisk. ::

      I like to make peanut brittle, too. I have a really easy microwave recipe I should post.

        I love making candied pecans and butterscotch nut clusters. The nut clusters are yummy and sooo easy to make...only 3 ingredients and a few minutes in the microwave.

            Here's the recipe for the microwave nut clusters. I love them because they take no time to make and are both salty & sweet. Yum!

            12 oz butterscotch chips
            6 oz chocolate chips
            1 1/2 cups salted peanuts

            Microwave chips in bowl for 6 min. at 50% power (there may be some chips left, mix well with spoon).

            Pour in salted peanuts.

            Drop by teaspoonful onto cookie sheet and refrigerate 1 hour. I like to fill mini baking cups with the candy mixture.

                I make granola every year- a huge batch that I give out as gifts. I usually choose an easy recipe from recipesource.com. It is so good and easy to make. I always wonder why I dont make it every month or so to keep us in stock.

                  I also love making Amaretto Cake for Christmas. Yum! Just prepare any boxed yellow or butter cake mix as directed except replace 2/3-1 cup of the water with Amaretto. Bake as usual. Once the cake has cooled for 15-20 minutes, poke holes in the top with a toothpick and drizzle 1/4 cup of Amaretto on top. I like making this cake as mini bundt cakes. You can also top with powdered sugar or buttercream frosting if you have a sweet tooth. Just thinking about it is making my mouth water! Unfortunately I can't eat any of it this year.
