    Hi guys, Does anyone have some scrumptious vegetarian or fish recipes for Lent? I am trying to throw some variety into the tuna, macaroni and cheese and fish stick cycle.

    Vegetable or lentil soup and grilled cheese. Yum. Spaghetti with meatless tomato sauce. Cheese ravioli with meatless sauce. Boca chicken nuggets or patties. Cheese pizza. Quesadillas with grilled veggies or beans.
    I could go on and on. I'm starving!

      I made a great stir-fry wrapped in letuuce leaves with peanut sauce tonight- from Cooking Light- one of the cookbooks. I don't remember which one, I'll edit tomorrow! It had tofu, peppers (green, red, yellow) broccoli, green onion, garlic andmushrooms- with Japanese noodles. Delicious!

        Thanks everyone! You are full of great ideas! I have not done lentil soup in a while, and that sounds good. Also all the salmon sounds awesome. I will definitely look into the Vegetarian website. Heather

          Another good website is allrecipes.com. You can search by ingredient.

          I like marinating raw shrimp in salsa, cooking it, and throwing it in a salad with greens, black beans, and corn. Or instead of salad, making tacos out of it.

          There's a lot you can do with mushrooms- the flavorful, fancier varieties taste great with a little olive oil and butter.
