    For those italian food purists among you, don't read this - it's sacreligious.

    Here's an easy, but fattening, recipe, and my 3 year old will actually eat it.

    Ingredients:
    1 cup risotto (arborio) rice.
    2 Tbsp. olive oil
    1 Tbsp. butter
    1 onion, chopped
    A bunch of mushrooms, sliced or chopped
    3 cups hot broth

    Put the oil, butter, onions and mushrooms in a pyrex dish, covered. Nuke for about 3 minutes. Add the rice and stir. Nuke another ~2 minutes. Add one cup broth and stir. Nuke another ~5 minutes. Add another cup broth and stir. Nuke another ~5 minutes. Add the final cup broth, stir, and leave uncovered. Nuke another ~10 minutes.
    Stir it up and let it sit awhile. Eat it with tortilla chips if you really want to be decadent.

    You mean I don't have to stir in front of the stove for 45 minutes adding broth by the half cup????? My MIL would DIE if she found out I made risotto this way, but I'm going to try it.

      Is that the Barbara Kafka recipe? I've never seen it but only heard....I'll have to try it! Thanks, Fluff.

        where where you when I was single...? Seriously, I was wooed by the promise of "I really am a good cook." One Frozen Trader Joe's Lasagna in 6 years later...
