  • Annette's Chocolate Cake

This cake my mom makes for every birthday in our family. It's easy, really good, and nice uniced. You can ice it if you like, but I like making this cake in a bundt pan and powdering it with icing sugar just like I describe in the Orange Cake recipe.

This recipe is originally from a cookbook by Madame Benoit.

    2 oz unsweetened bakers chocolate

    1 cup milk

    2 tbsp butter

    1 cup sugar

1 egg yolk (add an extra yolk if you like)

    1 cup all-purpose flour

    1 tsp baking soda

Melt chocolate on a very low heat in a heavy metal pan. Add 1/2 of the milk and stir until thick and the chocolate is remelted. Continue heating slowly and add butter. Melt butter. Add sugar. Mix and stir in egg yolk(s). Mix throroughly.

Add dry ingredients together and sift. Add chocolate mixture and remaining milk to dry ingredients, alternating. Beat well.

Pour into greased and floured pan (8x8x2 or bundt). Bake at 375 degrees for 30 mins. Batter is thin, so don't be alarmed by that.
