If you like pumpkin...you'll love this recipe. It's one of my favorites!
Pumpkin Squares
Ingredients:
1 yellow cake mix
3/4 c margarine
3 eggs
1 can of pumpkin (16oz)
2/3 c evaporated milk
1/4 c sugar
1 tsp cinnamon
Mix together: 16 oz can of pumpkin, 2 eggs, 2/3 c evaporated milk in small bowl & put aside.
Mix together: 1 yellow cake mix (putting 1 c cake miz aside), 1/2 c margarine & 1 egg. It will be pastie. Spread in 9x13 greased & floured pan. Then spread pumpkin mixture over cake layer.
Mix together topping: 1 c cake mix, 1/4 c sugar, 1/4 c margarine, 1 tsp cinnamon. Sprinkle over top of pumpkin. It actually ends up looking like clumps...and that's perfect!
Preheat: 350 degrees
Bake: 45-50 minutes
