    Stuffed Shells

    1 box of pasta shells
    2 containers of Ricota cheese
    2 cups of Mozzarella cheese
    1/8 cup Parmesan cheese
    1 egg

    Prepare sauce: Mix cheeses and egg in a separate bowl. Cook shells until soft (put a tablespoon oil in water to prevent shells from sticking).

    In the bottom of a 13X9X2 in. pan, put thin layer of sauce. Stuff shelss with cheese mixture and place in pan. Cover with remaining sauce: Bake at350 F for 10-15 min.

    I made this for dinner last night and it was awesome- and soooo easy- I got it from the weightwatchers website.

    4 12 oz cans of Spicy V-8 juice, chilled
    I medium onion, chopped
    1 tsp cumin
    1 tbl. chili powder
    2 tbl. red wine vinegar
    2 medium corn tortillas

    slice the tortillas in to 1/4 inch slices and place on a baking sheet. Cook for 10 minutes at 450 degrees until crunchy.
    Cook the onion over medium heat until they start to get soft. Add the cumin and chili powder and cook for another minute or so. Meanwhile, pour V-8 juice and vinegar in to a large plastic or glass bowl. Add the onion mixture. Garnish with sliced cucumbers, guacamole, fat free sour cream or plain yogurt. Sprinkle the tortillas on top. serves 4
