Here's what you'll need:
Salmon:
1lb of salmon (for two)
lemon
salt and pepper
cooking wine
2 eggs (for two)
flour
bread crumbs
Mashed potatoes:
3 potatoes (for two)
butter
sour cream
Take your salmon and sprinkle some salt and pepper on it. Add some cooking wine and a little lemon. Let this sit for 15 minutes to half an hour. While this is marinating, take three bowls. First bowl, add a little flour. Second, fill with the eggs and beat. Third, fill with some breadcrumbs. After the salmon sits, take it and dip it in the flour. Next, take the same piece and dip it in the egg mixture. After that, take it and roll it in the breadcrumbs. Do the same with each piece of salmon.
Heat up nonstick pan and add some PAM or cooking spray. Take your salmon pieces and place in pan. Let it cook for about 3-5 minutes on each side. Put on low while you take care of the potatoes.
Mashed potatoes:
Take the potatoes and peel off skin. Get saucepan, fill with water, and place potatoes in pan on medium high heat. Let sit for about 15-20 minutes until softened. Drain. Mash potatoes with fork. Mix butter and sour cream until texture gets creamy.
Take the mashed potatoes and place a few spoonfuls on the plates. Next, lay the salmon on top of the potatoes.
Serve with a little lemon if desired.
