Thanks everyone. I'll definitely let you know how they turn out. As for the trays, I usually put one in the oven and have one ready for the next batch so I'll be able to keep them cool.

I think I'll bake either tomorrow night or this weekend. Figure I better start the cleaning tonight as it is more time-sensitive with SIL's ETA on Friday. Actually, tomorrow I may be baking a cake for another colleague.

And, not only will I let you know how I think they've turned out, I'm sure my friend will let me know how he feels about the final product.
