I'm trying to incorporate more veggies into our diet. I've never really liked them, but am really focusing on improving my eating habits this year. I'd love to hear some of your favorite ways to prepare veggies for the family.

I take everything that I have- zuchinis, peppers, onions, whatever is about to rot, cut it up, saute in olive oil with crushed garlic and throw over pasta.
Voila! Pasta Primavera.
If I get really exotic, I'll make a salad and garlic bread and open a bottle of red.

We've been on a sweet potato kick lately. I just throw them in the microwave and top with a little bit of butter and a pinch of brown sugar.
Or, slice sweet potatoes into 1/4" thick medallions, boil in salted water for 2-3 minutes, remove from water and drizzle with olive oil, then grill them until they are soft (can also bake in the oven if it's too cold outside to grill). Tastes like french fries, but much healthier.
I always throw in some spinach whenever I make spaghetti sauce.
We've also been eating a lot of spaghetti squash....DH likes to eat it with a bit of spaghetti sauce on top.

We're trying to eat more veggeis over here, too. I personally like most vegetables, but dh and the kids don't really like anything aside from carrots and broccoli. Last night we stumbled on a good way to get Syd to eat the zucchini we sauteed. We each put a piece on our fork (dh, Syd, and I) and at the count of 3 we all took a bite. We have a particularly hard time getting her to try new veggies, but she ate all that was on her plate.Awake is the new sleep!

I also subscribe to Vegetarian Times to get new and interesting veggie recipes. I LOVE VT and I'd probably go 100% veg if I weren't cooking for two other people. (although Nikolai thinks that chicken nuggets and fish sticks are merely vehicles for ketchup)
In fact, the infamous Thanksgiving yam/apple dish came from VT about 10 years ago.
