    Here is a strata recipe that I have made and enjoyed.

    ARIZONA CHEESE STRATA

    1 cup milk
    2 large eggs
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 cup (packed) grated Monterey Jack cheese
    3 tablespoons sliced green onion
    2 teaspoons minced jalapeño chili
    2 cups cubed white sandwich bread (about 3 slices)

    1/2 cup bottled chunky salsa
    2 tablespoons chopped fresh cilantro




    Preheat oven to 400°F. Lightly butter 9-inch-diameter glass pie plate. Whisk milk, egg, salt and pepper in medium bowl to blend. Mix in cheese, green onion and chili. Add bread and stir until moistened. Transfer mixture to prepared pie dish. Let stand until bread absorbs most of custard, pressing several times to submerge cubes, about 5 minutes.
    Bake strata uncovered until light brown around edges, top is crusty and knife inserted into center comes out clean, about 20 minutes.

    Combine salsa and chopped fresh cilantro in small bowl. Cut strata into wedges. Serve with salsa.

    2 servings; can be doubled.

    Another one that I like from Eating Well. It is aiming to be healthier, if you don't feel the need just do a total of 6 eggs. Follow basics of direction above to prepare. The base recipe is:

    Custard --
    4 egg whites
    4 eggs
    1 c skim milk

    This is enough for 4 cups of 1 inch cubed bread, about 1/2 a pound or 4-6 slices. Bake at 375 for 45 minutes in an 11x7 dish.

    Arugula and Chicken Sausage Bread pudding -- add 2 T dijon mustard, salt and pepper, 1/2 c sliced fresh basil to the custard. Add 5 c chopped and wilted arugula, 1 c cooked chicken sausage (5 ounces), and some artichoke hearts to the bread. Top with 3/4 fontina.

    Ham, Gruyere, and Spinach (equally good w/o the ham) -- Add 2 T dijon mustard, 1/4 tsp pepper to custard. Add 5 c chopped wilted spinach, 1/2 c chopped jarred red bell pepper, 1 c diced ham steak (5 oz) to the bread. Top with 3/4 c. grated gruyere and a little parmesan if you like.

    With the egg whites and skim milk, these are healthy dishes with a good serving of protein.

    There is also a recipe for strawberry-rhubard bread pudding and chocolate cherry and almond that I haven't tried yet. I'll try to add those later.
