    Ahh ... the good thing about the "Blueberry Debacle" from the other day is the large amount of blueberries I had in my fridge. I made a super-yummy pie today!

    It's pretty standard, blueberries, lemon juice, lemon zest, sugar, allspice, tapioca (for thickening).

    I'll post the actual recipe if anyone wants it. I just wanted to share my YUMMY thoughts.

    I'm hoping we will have enough berries for a pie in another week or so.

      Can you please post the recipe, Jenn? I love blueberries!! I have made the same blueberry crisp about 10 times this summer and would love to try something new.

        sure! it's from "Cooks Illustrated: The Best Recipe". They have basic instructions for summer fruit pies. For blueberry it's:

        3 pints (or 6 cups) blueberries
        3/4 to 1 c sugar - depending on how sweet the berries are
        3 to 4 T tapioca beads for thickening
        2 t lemon juice
        1 t grated lemon zest
        1/4 t ground allspice (I used pumpkin pie spice ... it's kind of my all-purpose baking spice mixture)
        pinch grated nutmeg (taken care of by pumpkin pie spice, too)

        I eyeballed everything but the sugar, and went heavy on the lemon juice & zest. I like the tartness.

        Bake in pie crust (top & bottom -- lattice if you're ambitious) at 400 for 20 to 25 min, then reduce to 350 for 30 to 40 minutes longer.

        It was fab. It's all gone now ... Time for another trip to the blueberry patch!
