  • ziploc bag omlet

sounds gross and weird, but it's actually really yummy, easy and fast. I plan to make several and store them in my fridge, so I can make a good breakfast while my coffee is brewing.

it's not pretty (kind of looks like a tube of eggs), but tasty.

crack 2 eggs into a ziploc bag, shake to mix up
add omlet toppings as desired (I did ham, cheddar cheese, onion, and frozen hashbrowns, with salt & pepper)
seal bag, forcing all air out
put in pot of water at a rolling boil, and leave for 13 minutes

cut open bag (I actually just opened it), and dump on plate.

    yummy! really - it is!

Yum! I can't wait to try this recipe! Another way I make omelettes is in muffin pans. Spray muffin pans with nonstick spray, dump in eggs & toppings, top with cheese & green onions, and bake. I usually throw a few into a ziplock so DH can microwave them for breakfast the next morning.

At what point do you freeze it though? After boiling?

no - mine never gets frozen (I don't think the muffin pan one does either). Mine gets eaten after the boiling, but could be 'premade' by having the ziplocs full of eggs / toppings (uncooked) in the fridge. I imagine they'd probably be good for about a week that way.

the other suggestion was to make them in muffin pans and bake them, and then leave the extra in the fridge to be nuked the next day. i'm not a fan of left over eggs, so I probably wouldn't do well with that. plus, they'd be so cute & tiny I'd eat too many to start with.
