When to add some spices would be tricky. Slow-Cookers tend to suck the life out of some spices, while enhancing others (and I don't know the rhyme or reason).
Most of the indian stuff I can cook are vegetables, and all day in a slow cooker can really kill those. I know I was giving alison a hard time about the 'consistency' ... but the veggies will pretty much turn to soup!

I bought a jar of Patak's premade Rogan Josh cooking sauce and put it in the crockpot with a package of skinless,boneless chicken thighs. It really smells wonderful. Not sure how long to cook it though? I'm doing the turkey legs tomorrow.Luanne

I'd keep it on low, and you can probably cook it all day. Chicken thighs will shred, which is okay - and the low heat will help to infuse the meat with the flavor. You could throw in some garbanzos or peas w/about 1 to 2 hours left to give it a change in texture. I'm trying to decide if sav usr would work in a crockpot. it's my favorite Indian food -- and you pretty much usually pressure cook the hell out of the peas, so the slow cooker should be okay.
I'll have to play with it. Maybe when my MIL is here, but she'll think I'm crazy. (What else is new?)

It was very good!!! I also bought a jar of Vindaloo paste and combined some of that with cocanut milk (lite) and put it in the crockot with apork tenderloin. Also excellent!Luanne
