This dish has been quite popular at many events so I thought ya'll might like it. It's light, quick and a good complement to many meat and fish dishes.
I don't really measure this cuz I've made it so often.
Depending on size of veggie - equal parts of all three
2 cups Cucumber
2 cups Tomatoes seeded depending on size - I prefer Roma or heirloom
2 cups green pepper
1/2 cup feta cheese crumbled
8-10 Kalamata olives (poor in a tiny bit olive juice as well)
optional - small amount red onion
Dressing:
1.5 Tb dried mint
1/8 cup fresh squeezed lemon juice
1/8 cup extra virgin olive oil
The dried mint is what makes this recipe a hit!
