    I would serve it w/o the rice, just the chicken & potatoes. You could also throw some garbanzos in the crockpot w/the chicken, or peas (or both) - or peas into the potatoes. Most of MIL's side dishes include potatoes. She has some eggplant dishes but has never taught me any and when I've tried to go solo something went desperately wrong.

      Or you could do a veggie biryani, which is spices, veggies and rice. Call me if you want the recipe. I'll PM you my phone # again since you're at your parents.

        When I made the chicken I also made a raita (cucumber yogurt stuff). I guess it's not really a side dish but it's pretty easy to do and my kids like it. I think it works better if you drain the yogurt for a little while beforehand but I've skipped that and it still works.

        Yum! Maybe that will be tomorrow's dinner.

          I do plain yogurt with a hot pepper, walnuts, and cilantro.
