OK...I posted this once before but it disappeared into electron heaven...
Mash up 3 avocados and 4 hard boiled eggs. Not too smooth - leave some lumps. Add a medium/large chopped onion, 2 tsp. salt, 2 tbsp. lemon juice, and 0.5 tsp chili powder. Stir it up. Chop up a mess of parsley and add it, and chop up some cilantro (careful - not too much - it's quite overpowering) and stir it up again. Cover with plastic wrap touching the surface of the salad so it doesn't turn brown. Stir it again before serving.
Eat with lots of tortilla chips.
