I had a Tuscan turkey one today. It had turkey, tomatoes, pepperoncinis and herbed mayo. It was good.

Couple of ideas: portobella mushrooms with grilled tomato and onion or a simple "capresi" type - motz., basil, tomato. I usually use sourdough for paninis because it seems to hold up pretty well!

PS- My friend Jeannette and I tested the theory that you could take any cheese, any jam and any bread and make a fabulous grilled cheese out of it and our hypothesis held true.

My favorite is the Buffalo Chicken with blue cheese from our local Stop&Shop Deli.
