    Anybody got any fun plans? I brought a king cake to work and I *might* make beignets tonight. Maybe.

    In true Catholic fashion, I also plan to stuff my face with sweets, as I am giving them up for Lent.
    Married to a newly minted Pediatric Rad, momma to a sweet girl and a bunch of (mostly) cute boy monsters.

    My plans include going out and stuffing my belly with greasy food and cheap beer. I don't do the whole Lent thing, so for me, Fat Tuesday is just an excuse to overdo it.
    I'm just trying to make it out alive!

      I'm debating whether or not to get the kids some paczki. That's the extent of our Fat Tuesday celebrations. I'm fat enough as it is. That, and the whole not being religious thing.

        A friend invited me over for red beans and rice. Which was nice of her. Otherwise I would have eaten pancakes by myself (which I already do for dinner plenty of times ).

          We had Jambalaya and homemade King Cake on Sunday night. I have beignets dough resting in the fridge to fry up tonight. I missed all the parades being in Florida this year.

            I need to post some recipes--we went to an awesome restaurant in the French Quarter called the Gumbo Shop. It was so good that we went twice AND bought the cookbook. I had the other MS1 students & spouses over Sat. night and made Red Beans & Rice, Jambalaya, and Gumbo. The recipes are to die for.

                  We had a Fat Tuesday fundraiser at the Mexican restaurant next to the elementary school. It was a pretty good turnout.

                            Yup--with a mixture of cream cheese, sour cream, pecans, cinnamon, and brown sugar. Turned out yummy.
