Fresh tomatoes, potatoes, frozen cut up chicken,& mushrooms. I have all kinds of spices but I can't use alcohol. I have a big all clad slow cooker. Please tell me how to utilize these w/ out it turning out like over cooked mush. I also have fresh , ginger, garlic & lemons @ my disposal.

You need to make a Chicken Taco Soup! I know it sounds funky but I promise it's good! I am a terrible cook and my friends/family are always generous enough (i guess?! lol) to tell me when my food is awful...however everyone genuinely likes this! Probably because I found it in a cook book and didn't come up with the recipe on my own!
ANYWAY!! It leaves lots of room for variety.....(and if you are a great cook then just ignore my warnings)......no worries about messing it up because you can always just dump tortilla chips and sour cream/shredded cheese on it when you serve it and ppl will looooove it! I'm new here...haha can i suggest adding lots of sour cream and cheese on a medical website or am i going to get scolded by the cholesterol police? THERE ARE LOTS OF VEGETABLES
What to locate in your pantry or buy:
32 oz. chicken broth (i like low sodium so you can salt it to taste) OR one bullion cube and appropriate amt. of h2o
1 can of corn (drain it first)
1/2 cup chopped onion (or about 2 tsp onion powder)
1 can pinto or black beans (drain first)
Fresh cilantro (super affordable and it adds tons of flavor...but a bunch for like $1 and chop it finely. Add about 1/8 cup)
Any other vegetables! Seriously...it's hard to mess this up! Trust me I would know
Optional:
1 cup salsa
What you have and should use:
1 clove chopped garlic
Potatoes (dice them into 1/2inch cubes)
Frozen chicken pieces
Mushrooms
Lemons (cut in half and use juice from 1/2)
It's awesome that you have lots of spices! You are probably a good cook and know much more about this than I do...so you might just
want to season to taste, but you should probably add about 3/4 tsp of cumin, 3/4 tsp pepper, 1/4 tsp red pepper and chili powder, and salt to taste.
Again this isn't a super strict recipe! It leaves room for lots of variety...so even at the end, you can season away and change it
up to however you like it!
Basically, in the morning, all you have to do is combine all of the above ingredients into the slow cooker, put it on low (or whatever the setting is for 8-10 hours) and let it go! PROMISE it wont be mushy! Hate that!

I would throw it all in, including the garlic, lemon and ginger, leave out the potatoes, and add a couple of hot peppers, water and lemon juice and cook on low for approx. 6 hours. I never have luck with potatoes in the crock pot, so I would cook them separately and mash them!Luanne
