Good luck! I love NC. My dream is to go back, but DH wants to go somewhere up north for residency. I don't know anyone up there and it's cold, haha. I've got 10 years to convince him to move back permanently. My family has been there essentially since they came off of the boat and it's just home to me. Plus, since I'm from the coast it should hardly be a hardship to move back (or at least that's the angle I"m working ). NC is the perfect state, IMO. You have the mountains and you have the water. It's small town, but it also has bigger towns. It's now officially a political swing state and it has a really good collegiate system for being in the South. I've heard people say there's not much to do there, but coming from a town that basically only had a Walmart until around 2000, I think there's a lot to do in places like the triangle (or Charlotte, or the triad, or Asheville- at least before it was taken over by hipsters). The farmer's markets are so nice and they have great state/national parks. Anyway, if you can tell, I'm a little homesick, lol.
