I feel more comfortable in places that aren't as swanky. The hidden costs and the hoity-toitiness (yep, just made that a word) put a damper on trips, especially when they're supposed to be romantic. I always take my own water and snacks, especially if things around the place close early. I'm a grazer and get cranky easily.

We just got back from a weekend at Langham Place http://newyork.langhamplacehotels.com/ and I love it. The NY one is my home away from home, but the Boston one is nice too. For my money, I would take a Ritz, Westin or W too, but in NYC it's my go-to. Granted I get VIP treatment and hugs from staff - but their standard room fee includes Wifi, Nespresso, and a stocked fridge of sodas and water (fizzy and still).

I freaking hate staying at Waldorf-Astoria unless it's in the tower, and even then I would put it at a 3-star. It's poorly maintained.

I prefer the higher end hotels but I always make sure I have a card with them for nights stayed and generally ask for the moon from the general manager. Can I get a microwave (when I travel for work sometimes you just want a lean cuisine)? Can I get a fridge that DOESN'T have a minibar fully stocking it already so I can put leftovers somewhere? Can I have real cream brought to the room (for my coffee)? Are there any upgrades at all I can get? Can I get a room away from the elevator/extra pillows/extra whatever? If you leave a good tip and a thank you note for housekeeping they tend to hook you up.

I agree re: tips and notes.
We do that, even in 2-3 star places, and get super nice treatment.

That is great for frequent travelers. Yes, they always get perks as they should.

My issue is trying to understand how a 3 star hotel can afford to offer free wifi, water, etc but a place where I am paying $300+/night cannot. That is annoying to me.

For personal travel, I never have an issue with the places we choose. The pricier it is the more niceties we get...as it should be IMHO.

See, I've stayed at that BW in Healdsburg and it was a total dump. Maybe highly variable rooms? Or they remodeled in the last 2 years? We were at a Holiday Inn Express this weekend, and nothing worked... Bad water pressure, bad wifi, TV electrical outlet didn't work, noisy neighbors and paper thin walls... I wish I could say we're done with cheap hotels, but the med school budget dictates... Ugh.

See, I've stayed at that BW in Healdsburg and it was a total dump. Maybe highly variable rooms? Or they remodeled in the last 2 years? Maybe rooms differ because I was not expecting much. We only stayed one night but as I said, it had more ammenities than the SF Intercontinental.
