I have a vegetarian potluck tomorrow and I am supposed to bring a side dish. Everyone always brings fruit because they never tell us what the m main dish is. What side dish would you bring that would go with anything?

I do have a good carrot souffle recipe and it doesn't have to be vegan...but how much work do I want to put into this is another issue.

You can do what I lovingly refer to as "olive medley" - I usually put in 3-4 varieties of olives and then dump a bottle of "Newman's Own olive oil & vinegar salad dressing" on top. It's better if you let it sit overnight. Serve with Parmesan crusts or sliced Italian bread and feta cheese on the side. I made it once in a fluke and everybody loved it (including several people who prefaced with "I hate olives"); now it's requested for every potluck I attend.
