    4 c vodka
    1/2 c lemon rind strips (about 7 lemons)
    3 c water
    1 1/2 c sugar

    1. Combine vodka and rind in a bowl. Cover and let stand at room temperature for 2 weeks. Strain through a sieve into a bowl; discard solids.

    2. Combine 3 cups water and 1 1/2 cups sugar in a large saucepan. Cook over medium heat until the sugar dissolves, stirring occasionally. Remove from heat, and cool to room temperature. Add to vodka mixture.

    3. Divide limoncello evenly among 3 sterilized 750ml bottles and seal.

    Yield: 7 cups (serving size about 1/4 cups)
    Note: Store in the refrigerator up to 1 year.


    When I made mine, I zested the lemons rather than using rind strips. I think it gave it more of a lemony flavor. I also used a large preserves jar like this http://www.worldmarket.com/product/i...ductId=3597517 to store the limoncello in. Additionally, I stored mine for 5 weeks instead of the 2 that the recipe said.

    I also made cute little gift tags using I picture I took in Cinque Terre of a basket of lemons that said "when life gives you lemons, make limoncello"

        Kris, I'm a knitter too. I'm making my daughter some felted slippers.

        They are shaped like little ballet flats, and supposedly take about 90 minutes to knit, plus felting time.

        The limoncello sounds wonderful - I'm going to try it!

          Those are cute - do you think they stay on? The only ones I have knit are the fibertrends slippers. cute but fiddly.

                The ballet flats are adorable; several of the women I knit with have made them; one was finishing up a pair yesterday that looked great! She did have to cut the edges, though, said the edges felted up quicker/tighter than the rest of the foot, so she had to cut a bit of the felted material once they were made, so they'd fit right. She said she'd also make them come up a bit more on the sides; hers ended up being really low. Totally cute, though, and quick, so probably worth playing around with. They seemed to stay on OK while she was wearing them.

                      I just finished a new doll for one of my cousin's daughters. It seemed to take for-freakin'-ever because there was a bunch of hand sewing and Sophie didn't want to nap... But it is beyond adorable and S gets really peeved when she sees it because I won't give it to her. The pattern is from Melly & Me http://mellyandme.typepad.com/photos..._me/index.html and is the Petunia.



                      The best part is that I scored the fabrics from my mom's quilting stash and used some leftover batting to stuff it with. Yahoo for free gifts (except the time).
