      Are you kidding me? Is the weather still really that iffy there? A roasted bird and apple crumble are perfect for cold days.

          This is a great way to do a whole chicken, too.

          Episode: Basics of Ovens

          3 1/2 pound chicken, rinsed and patted dry
          Salt and pepper

          Preheat the oven to 450 degrees. Season the chicken all over with salt and pepper and place in a roasting pan. Roast for 45 minutes, or until the juices run clear, when thigh is pricked with a skewer. Transfer the chicken to a cutting board and let stand for 15 minutes.

          It seems way too simplistic and likely to dry out the bird, but it doesn't. It works great.

            Yup, a roasted chicken is the easiest thing ever. I also like to stuff mine with onions, garlic, apples and lemon. If you throw some potatoes around it in the pan, you have an instand side dish.

              You inspired me. I'm using the leftover chicken for the Barefoot Contessa Chicken Stew with Biscuits and making stock with the bones.

                I've been super lazy lately. But Sea Bass is on sale this week, so hopefully I'll get inspired to do something with it.
