3 1/2 pound chicken, rinsed and patted dry
Salt and pepper
Preheat the oven to 450 degrees. Season the chicken all over with salt and pepper and place in a roasting pan. Roast for 45 minutes, or until the juices run clear, when thigh is pricked with a skewer. Transfer the chicken to a cutting board and let stand for 15 minutes.
It seems way too simplistic and likely to dry out the bird, but it doesn't. It works great.Comment

Yup, a roasted chicken is the easiest thing ever. I also like to stuff mine with onions, garlic, apples and lemon. If you throw some potatoes around it in the pan, you have an instand side dish.Comment
