    I remember at some point Heidi mentioned that tinkering with baking recipes is not as easy as tinkering with regular ones. Today I realized how right she is. There's a recipe for banana pancakes in one of the Barefoot Contessa books I have and it's yummy. I've made it following all the measurements and the result was delicious but I ended up with enough pancakes to feed an army. I tried halving everything today (twice) and it was a disaster. I'd love any suggestion on how to make it work, I can post the whole thing here if that will help. If my only option is to make 16 pancakes then so be it but as good as they are I can't have them for breakfast, lunch and dinner.

    but you can freeze them. it do it all the time for the boys.

      That's what I was going to suggest as well. I freeze them (layered between wax paper) in batches of four in a ziplock.

      I do that w/ waffles, too. Makes it easy in those ugly mornings.

        DH and I tried to halve a pancake recipe the other weekend and it was disasterous too.
        Wife to NSG out of training, mom to 2, 10 & 8, and a beagle with wings.

          I never even thought of freezing them. That's a brilliant idea. How do you defrost them? In a toaster?
