    I just tried these the other day and they are quick, easy and really tasty. I was a little delicate with them, but had no problems with them falling apart or anything.

    Black Bean Burgers

    Ingredients:
    1 - 2 tbls olive oil
    1 15oz can black bean, drained & rinsed
    1 clove garlic, minced
    1/4 green pepper diced
    1/4 red pepper diced
    1 med onion diced
    handfull mushrooms diced
    1/2 tsp cumin
    1 - 2 dashs cayenne powder
    1 egg
    3/4 cup bread crumbs (I use Panko)
    salt & pepper to taste

    Directions:
    Heat skilled on med/high. Saute all vegetables in one tblspn olive oil for 3 - 5 minutes until soft. Mix in spices and salt & pepper to taste. Set aside. Mash black beans. Mix together vegetable mixture and beans. Add egg and mix well. Mix in bread crumbs well. Let sit a few minutes. Form into patties and cook in skilled with left over olive oil, 5 minutes on each side until browned. Serve with lettuce, tomatoes, mustard on bread or buns. Enjoy!

    Makes 4 patties.

    YUM Did this one tonight and it was a hit. The kids even ate the burgers without protest (we all love black beans)! I topped it with cheddar for me and the kids. DH topped his with avacado and gorganzola.
