  • Corned Beef

    What is the best way to cook corned beef. It is on sale this week. It is usually too dry when I cook it. Anhy suggestions?

    I'm not sure exactly how my friend made it but it was in the crockpot with potatoes, carrots, onions, beer...and ??. It was delicious. We had Irish Soda Bread as well.

      Crock pot. Yum!

      I put it in water with some peppercorns for about 8 hours. Then I add potatoes and cabbage after about hour 4.

          I dump it into the crockpot in the AM with the included seasoning packet, a sliced onion, sliced cabbage and a few chopped tatos with water or a beer. It is ready when it falls apart and no slicing is necessary.

              I'm late here, but I did mine in the crockpot on Monday and it was delish.

                If you don't have a crock pot, you can also cook it in a large pot, covering the meat with water and bringing it to a boil, then lowering the heat as much as you can while keeping the water to a low simmer. Simmer for 50 minutes per pound, you'll have tender corned beef everytime.
