What is the best way to cook corned beef. It is on sale this week. It is usually too dry when I cook it. Anhy suggestions?

If you don't have a crock pot, you can also cook it in a large pot, covering the meat with water and bringing it to a boil, then lowering the heat as much as you can while keeping the water to a low simmer. Simmer for 50 minutes per pound, you'll have tender corned beef everytime.
