      I agree, I love to cook with it. Cut the sugar down and use the actual bars of Mexican chocolate. We've made cakes, cupcakes (with mocha buttercream frosting), but one of my favorites are my Mexican chocolate truffles....yum!!

      eta: And throwing in a tad of chipotle pepper, or cayan (sp?)...for a little extra ping on the tongue. Yum, yum, yum!!
