  • Pumpkin Recipes

    I have some canned pumpkin, so I was thinking of making something with it. I am the only one to eat it, so it would be great if I could freeze part of it. Anybody have some pumpkin recipes?

    There's a recipe on allrecipes called Granny Kat's Pumpkin Roll. It's really delish, and you could cut it into 5 or 6 pieces, and freeze them individually.

      Mix the can with 1 box of spice cake mix. Maybe an egg, nothing else. (i.e. don't add the additional ingredients listed on the box). Cook according to the directions on the box. Makes the most moist, wonderful muffins/bread ever. It's actually a WW recipe too! If you want to frost them, get a can of cream cheese frosting, dump in some cinnamon & nutmeg (or PP spice), and you got yourself cupcakes.

        I have a really good Pumpkin Spice Muffin recipie. It freezes well too.

        Pumpkin Apple Harvest Muffins

        Ingredients:
        1 1/2 cups canned pumpkin puree
        3/4 cup brown sugar
        1 cup white sugar
        1 cup peeled and diced apples (can shred them too)
        2/3 cup vegetable oil
        3 eggs
        2 cups all-purpose flour
        1 cup whole wheat flour
        2 teaspoons baking soda
        1/2 teaspoon baking powder
        2 teaspoons ground cloves
        2 teaspoons ground cinnamon
        2 teaspoons freshly grated nutmeg
        1 teaspoon all spice
        1 teaspoon salt
        1/2 cup golden raisins (optional)
        1/3 cup chopped walnuts

        Directions:
        1. Preheat your oven to 350 degrees F. Grease your muffin tin with PAM or another baking spray.

        2. In a large bowl combine the pumpkin, sugars, veg oil and eggs, whisking until thoroughly combined. Fold in the diced apples. Set aside.

        3. In a medium bowl combine the flours, baking soda, baking powder, salt and spices, mixing well.

        4. Add half the dry ingredients to the wet ingredients, mixing to combine. Add the remaining half of the dry ingredients and combine. Fold in golden raisins and chopped walnuts.

        5. Divide the batter evenly among your muffin cups. Bake regular sized muffins for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Bake jumbo muffins for 30-35 minutes or until a toothpick inserted in the center comes out clean.

        6. Allow muffins to cool in the pan for 10 minutes. Then remove to a cooling rack

          Yum! I'm so excited - I found a 3-pack of canned pumpkin at Sam's! Here's my contribution:



          Pumpkin Chocolate Chip Cookies

          Ingredients:
          1 cup (2 sticks) unsalted butter, softened
          1 cup white sugar
          1 cup light brown sugar
          2 large eggs
          1 teaspoon vanilla extract
          1 cup canned pumpkin puree
          3 cups all-purpose flour
          2 teaspoons baking soda
          1/2 teaspoon salt
          1 teaspoon ground cinnamon
          1/2 teaspoon ground ginger
          1/4 teaspoon ground nutmeg
          1/4 teaspoon ground cloves
          2 cups (12-ounce bag) milk chocolate chips, not semisweet

          Directions:
          Heat the oven to 350 degrees.

          Using a mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until the mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree.

          In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.

          Slowly beat the flour mixture into the batter in thirds.

          Stir in the chips.

          Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.

              I know this sounds crazy, but I made it the other day. I did however change it up. I only did one can of pumpkin and add a lot more spices because it was a bit too bland for me (oh and didn't use cheese because I keep kosher).Also I threw a can of black beans in there. I added water to it because it was too thick, but chicken broth or veggie broth would have been a better choice. Anyway with the doctoring, it was good.

                I tried Sooner's pumpkin/spice cake mix tonight and it was a resounding success. Kids devoured them gladly.

                  I put on my big girl pants this year and I'm using pie pumpkins instead of canned. I also read that canned.pumpkin is not pumpkin but a variety of butternut squash?
                  Yeah, they're called Dickinson Pumpkins...sort of like a long pink pumpkin/squash hybrid looking thing

                    Those pumpkin muffins SoonerTexan posted were great and her fudge was awesome!

                    This is my favorite thing to make with canned pumpkin.

                    Pumpkin Streusel Coffee Cake

                    Streusel topping:
                    1/2 c flour
                    1/4 c brown sugar
                    1 1/2 tsp cinnamon
                    3 Tbsp butter
                    1/2 c coarsely chopped nuts

                    Combine flour, sugar and cinnamon. Cut in butter. Stir in nuts. (I omit the nuts and pulse the rest in the food processor.....sometimes I use another streusel recipe....I'll try to find it....I love the streusel topping so I usually double recipes.)

                    Cake:
                    2 c flour
                    2 tsp baking powder
                    1 1/2 tsp cinnamon
                    1/2 tsp baking soda
                    1/4 tsp salt
                    1 c butter softened
                    1 c sugar
                    2 eggs
                    1 cup pumpkin
                    1 tsp vanilla

                    Cream butter and sugar. Add eggs one at a time. Add vanilla and pumpkin. Gradually beat in dry ingredients.

                    The recipe calls for a 9" round cake pan....half batter, half streusel, rest of batter, rest of streusel. 350F oven for 45-50 min.

                    I have a mini bundt cake pan (makes 6) that I like to make this in. I do streusel, batter, streusel batter.....so that when it's inverted the streusel is on top and middle.

                    Alternative streusel:
                    1/2 c flour
                    1/2 c white sugar
                    1/2 c brown sugar
                    1/4-1/2 c butter
                    1 tsp cinnamon

                    Pulsed in food processor.

                              I've actually got a whole recipe book on nothing other than PUMPKIN! (I hate hate hate pumpkin, but DH loves it!) Pumpkin bread, soup, pudding, pies, cookies, pasta, with veggies, with meat...

                              Since you're in STL, I'd be glad to meet up with you and pass it off.

                              Only word of caution: it is sort of "gourmet"-ish for my standards. I don't think the recipes call for canned pumpkin. But I refuse to prepare fresh pumpkin and have always been able to effectively substitute with canned!
